8:50am

This morning I made a dessert to have
this evening.

Ingredients-
8 pack of strawberry, unfrosted pop tarts
1 four serving size vanilla pudding
1.5 cups milk
1/2 container of cool whip

Arrange 4 pop tarts in bottom
of square baking dish breaking
or cutting any to fit.
Mix together pudding with milk.
Spoon over top the pop tarts.
Add another 4 pop tarts on top of the pudding.
Then spoon half container of
cool whip on top.
I finely grated up some white chocolate
on top of the whipped cream.
Refrigerate 3 hours or overnight.
You want the pudding to soak into
the pop tarts and make them soft.

For supper we are having what I
call Rib Busters.

Add a package of pork ribs to the crock pot
along with a bottle of bbq sauce.
Cook 4-5 hours until pork ribs
fall apart.
Shred ribs off bones and remove
any excess fat. Return to crock pot
and stir together with the bbq sauce
it was cooked with.

Serve over top of mashed potatoes.
I usually just cut up potatoes into small pieces,
skins and all, and throw into a pot
of water to boil.  It cooks faster when
in smaller pieces.
I don't remove skins when making
mashed potatoes because that's
where the vitamins are.

For breakfast-
homemade glazed doughnuts & holes.
These are easy peasy to make!

You need a can of biscuits,
a cap from a pop bottle,
1 cup vegetable oil,
1 cup powdered sugar,
1 teaspoon vanilla,
1 Tablespoon + 1 teaspoon milk
Center the bottle cap in the middle
of a biscuit and remove center
to make doughnut shape.
Save centers to make doughnut holes.
Heat vegetable oil in small saucepan.
Place up to 4 doughnut in pan.
Flip when underside is golden brown.
Remove with tongs and place on paper
towels.  I didn't have any so used
a dishtowel.
In a small bowl mix together
milk, powdered sugar and vanilla.
Dip tops of doughnuts into
glaze mix.  Sprinkles optional.

1:00pm

Sure wish I had the energy I had yesterday.
I tidied up the carport/patio area
and got supper, dessert and breakfast made
and that's about as far as I got today.
With kids I feel as though I take
2 steps forward and 5 steps back!
Can't never seem to get ahead.
