5-26-11

I saw this recipe for
from Betty Crocker
I want to try.
Looks simple enough to make.
You could also use corn bread
mix instead of Bisquick.
Or how about a breakfast version
with scrambled eggs poured over the top
and replace the chicken
with some ground or cut up sausage links.

 Went to Wow this morning.
At first they asked if I was sure
if I canceled my service.
I said yes I called three times
that day and even had some 
porting numbers of some sort
to say that my phone number was
switched from Wow to Insight.
They then checked their records
and their records indicated that
I did indeed call that day to cancel.
I had to call another big wig person
that wasn't in the office
and are now awaiting for them
to call me back after they investigate
this matter.
What a pain in the rear this is!!
And they wonder why I canceled them.

On our return trip home this morning
mom wanted to stop in Walgreens
to get a prescription.
While there I got 6 boxes
of flavored sugar free pouches that you mix
in water bottles.  There was
8 packets in each box.
Normally they are $1
and are on sale for .59 cents.
I have never seen them any lower
than $1 at any store.
There was a limit of 6
and there was other flavors
than the ones I got below like
pink lemonade, green tea, grape & orange.

Have y'all heard of

They are cupcakes made with
a devil's food cake mix
and are topped with cream
cheese and chocolate chips.
Well that's the way I make
them- using a shortcut with
a cake mix.
Ooh so good!

Anyway today I saw that I had a can
of blueberry pie filling in the pantry.
So the creative juices got to flowing
with what I could make with some
blueberries.  I decided to try my own
recipe at making what I'll call-
Blue Bottom Muffins.
I love cream cheese and thought
that if I paired that with the blueberries
it would make a yummy breakfast
muffin.

So here's my recipe,

Blue Bottom Muffins

muffins-
2 cups Bisquick or baking mix
2 Tablespoon vegetable oil
3/4 cup blueberries or blueberry pie filling
2/3 cup milk
3/4 cup sugar
1 egg

Beat egg in bowl, then add
the rest of the ingredients
except blueberries, and mix well.
Gently fold in the blueberries.
I think next time I'll cheat
and use either a cake
or Jiffy muffin mix to make these :0)
If using a muffin mix then I would
recommend using a couple boxes.


topping-
8 ounce cream cheese
1 egg
1/3 cup sugar
1/8 teaspoon salt
1 1/2 teaspoons lemon juice

Beat together in small bowl with mixer.  

Preheat oven to 350 degrees.
Line muffin tin with 12 cupcake wrappers.

Fill each cup about 3/4th the way full.
Then add a dollop of about a tablespoon
of cream cheese on top.

Bake 15-18 minutes.

Going into oven
Fresh out of the oven.
Breakfast is served.

I finally got around to planting
my banana pepper plants.


Sure hope the rain starts to taper
off from raining so much.
My garden plants love the sun
and weren't liking all that rain.
Tomato plants don't like wet leaves.
I have one cherry tomato plant that looks like
it is diseased from all the rain we've had.
Luckily it is one on the end and I
may be able to pull it up
and it not affect the rest. 
When watering tomato plants
always water them at the base of the plant
trying not to get their leaves wet.
A little rain won't hurt them 
as their leaves should dry quickly.
But when you have day after day of
constant down pours then it's
hard to keep control of the plants.
I'd try to put a milk jug over the plants
but I think they are too big for that.

Yesterday I kept hearing dump
truck after dump truck passing by
our house.  Now today they put
up a road closed sign on our side street.


Our streets aren't the greatest with
many filled in potholes year after year.
They don't seem to want to repave it.
It's bad enough we see many buses 
use these streets from a school about 2 blocks
away.  But now I worry about
all these heavy dump trucks
and what they are doing to our road
that is already crumbling.

You know what's weird is that 
one street over where they are digging 
and working on putting in some kind
of underground pipes, well they
just completely repaved that road not
long ago and now are digging it up
along the sides!
There's your tax dollars at work.
Why couldn't we have done the pipe
work before paving the road!

And I worry about kids that play on
these streets that now have
to share them with dump trucks
of all things and I ain't talking
about the toy kind.

These dump trucks are coming down
our street, turning down the street to the side of
our house, stopping and then backing
all the way down the side street to the 
other street.  Then once full of dirt
come past here a second time.


Here's a scary thought.

for about 7 kids.


Good thing we won't be home this
evening for me to worry about
kids and dump trucks.

Tonight we're heading to Grove Port
around Ricart to a friend's house,
well Tony's friend anyway.
He works in a transmission shop out
in Reynoldsburg and has access
to a scanner to use on cars to diagnose
any problems with them.

This is not your little scanner that
Auto Zone uses, more like
one that is $1,000 or more.

It would run you about $100 to have
your car put on a scanner at a shop.
We're getting a diagnostic scan for
free on our car.  


Talking about Auto Zone or an auto
parts store that will run free scans on
your vehicle.  Why is it every dang time
we take a car there and have them
hook up their scanner to it
do they ALWAYS tell us we
need an oxygen sensor???!!!

We took this newest car there
right after buying it, like drove it out off
the car lot and over to Advance Auto.
I told Tony, how much you wanna bet
the scan says the car needs an oxygen sensor.
Sure enough that was the first words
out of the auto parts store's salesman's
mouth!


If anyone has had a scan done where
they didn't tell you, you needed an
oxygen sensor I would love to hear
about it because it would be a first.


Something seems fishy!

And I though my head was getting better, ahhhh!


Anyone need another reason to not use
Wow internet-phone-cable??


I got another bill today for $257.00!!

They charged me for April 21- May 21.
And then charged me for May 21 - June 21!!
And then threw in a $5.00 late fee.

I am so pissed it's not funny.
I talked to them THREE times
on the phone to cancel my services
last month on April 21st
and visited their office in person 
April 22-23rd to return
all the equipment!!!


Now tell me how am I charged for
these services when I have no cable
boxes or modems for those services???

I don't know who runs the customer
service and billing for all these
places but they sure don't have it together.

I have plans to go directly to
Wow's office tomorrow to get it straightened out.
I'm not dilly dallying around
talking to someone on the phone.
I want someone in person!!

9:50am

Last night's storms looked pretty
eerie when approaching.
Clouds had a purplish-pink hue to them.

10:00am

I've got 2 packages of
pork chops marinating.


One is in a mixture of honey mustard,
honey, soy sauce and Mrs. Dash seasoning.


The other is in Bob Evan's 
Wild Fire bbq sauce.


I'm thinking about putting
them on the grill this evening
depending upon the weather.
If it turns rainy then I can either
put them on the George Foreman grill
or in the oven.


Got some potatoes boiling
for some potato salad to
go with the chops.
I diced up the potatoes into
small cubes so it would cook
faster.  I also threw 4 eggs
in with them to hard boil them.
Once done will put into fridge
to chill until ready to make
the salad this evening.
(made at 4:30pm)


Will also serve with a side
of baked beans.


Once everything is boiled
and put into fridge then I am
heading back to bed.
Didn't sleep well last night.
Maybe slept 4 hours on and off.
Still feel crappy with
coughing and pressure in my head
from sinuses.
Been taking Thera-Flu for congestion.
But I've only been taking it for 2 days now.
Seeing some improvement but now
have a scratchy throat.
Will be so glad when this crap
has run its course!!
It's been going on 7 days now.

Waiting for potatoes to boil.


I saw this video, well it's mostly
just the sound, on the news last night.
It's of the Joplin, Missouri's  tornado.
These people gathered in a
convenient store's cooler
to take cover.
It'll give you goosebumps
trying to imagine what these
people went through!!

We grilled out this evening
and had a little picnic type meal
outside under the carport.



 I was saying during our meal
that we needed a picnic table.
I then thought about the old
wooden dining room table
that we had that we could
use for a picnic table
and put our lawn chairs around.
May have to saw down the 
base/legs a bit to get it to be
lawn chair height.
Hey, why buy new when you can
use something you already have
and give it another use!
If need be I could either spray 
paint it or use outdoor house 
paint to make it waterproof.

7:35am

I'm sorry I wasn't able to post
this yesterday as blogger wasn't
playing nice to me.
I really wanted to show you so
will try my best to post it
for the third time.
All the other attempts yesterday just disappeared
last night after publishing so I just
gave up and went to bed.

At around 8:00pm I was standing out
front under the overhang of the house
watching it rain.  I noticed to the 
West that it was starting to clear
and the sun was trying to peak out.
 I ran into the house to get my camera
when hubby asked what I was doing.
I said I predict a rainbow this evening
so want to have my camera ready
and waiting for it to appear.
All the conditions were right.
To the West the sun was trying to
shine, to the East was a backdrop of
dark clouds, and where I stood it
was raining but not too hard.
Hubby thought I was nuts for standing
in the drizzling rain for a rainbow.
I kept saying, It'll be here, you'll see!
So here are my photos of the 
birth of the most beautiful rainbow
I think I've ever seen.
All the pictures are better viewed
when you click on them.

So I was taking photos of the 
backside of the rain as it was passing.
I predicted where it would show up.

It played tricks with your eyes
at first but after a few moments
it began showing itself.
Hubby came outside to ask if I 
found the rainbow yet.
This is about the time it became
really visible.

I ran inside to tell the kids
about the rainbow.
The entire rainbow in three photos.
Still a little faint as the sun
is trying to shine brighter
and poke through the clouds
after the rain.

Of course I had to run back into
the house and tell the kids of
the double rainbow.
I love how the sky is darker
on one side and lighter on the other.

with Judgement Day as predicted by some.

from God to never to destroy the Earth again.

"'I set My RAINBOW in the cloud, and it shall be for the sign of the covenant between Me and the earth.  It shall be, when I bring a cloud over the earth, that the RAINBOW shall be seen in the cloud;  and I will remember My covenant which is between Me and you and every living creature of all flesh;  the waters shall never again become a flood to destroy all flesh.  The RAINBOW shall be in the cloud, and I will look on it to remember the everlasting covenant between God and every living creature of all flesh that is on the earth.' ” (Genesis 9:12-16)

I made up some homemade
Belgian waffles this morning
for a couple breakfasts this week.



I used a butter cake mix and mixed it
up according to the directions.
I then stirred in a 1/2 can of drained, crushed pineapple I had
leftover from making Hawaiian bread
along with a teaspoon of cinnamon.
I then poured 1/4 cups onto
my belgian waffle maker for each waffle.
 I was able to make 19 waffles
with the cake mix.
Only 18 shown as I had to taste
test one, lol.

Mom just called.
She wants me to design and make
a new cover for the food pantry
wooden chest at her church.
I'm up for a challenge and
already have an idea.


My step-dad is ready to go
out and buy supplies to decorate
this box with!  I don't think so!
I will use what I have on hand.
Why buy art supplies to decorate
this food pantry box when that
money could be used to
buy food to donate!


Anyways I'll let you know what
I come up with when I make it.

Bacon wrapped chicken breasts
from freezer.

Sour cream & chive mashed potatoes
with tomato gravy.

Shell pasta boiled in water
with tomato sauce & seasoning.
